Beef koftas with herby skyr

Gently spiced meatballs, fluffy grains, plus a herby, garlicky yogurt – a plate of Middle Eastern-inspired deliciousness ready in just 35 minutes.

Ingredients

  • 450 g pack Easy To Cook Middle Eastern Inspired Spiced Beef Koftas
  • 100 g bulgur wheat, rinsed
  • 1 tbsp olive oil
  • ½ lemon, juice
  • 200 g Danone Plain Skyr
  • 1 small clove garlic, finely grated
  • 25 g pack mint, leaves finely shredded
  • 25 g pack flat leaf parsley, finely chopped
  • 200 g cucumber, finely chopped

Method

  1. Preheat the oven to 200ºC, gas mark 6. Cook the beef koftas according to pack instructions. Meanwhile, put the bulgur wheat in a large saucepan and cover with cold water. Bring to the boil, then reduce the heat and simmer for 5 minutes, or until just tender. Drain thoroughly, then tip into a bowl and mix with the oil, lemon juice and a pinch of salt. Stir well, then set aside to cool.
  2. Mix the skyr with the garlic, half of the mint, most of the parsley and a pinch of salt; spread over a large serving plate. Spoon the koftas over the skyr, then sprinkle over the remaining parsley and some of the mint. Toss the cucumber and remaining mint through the bulgur wheat, then serve with the koftas.
