Chicken, Pepper & Spinach Omelette
A quick, protein-packed lunch — smoked paprika chicken, peppers and spinach folded into an omelette, with seeded toast on the side.

Ingredients
- 2-3 eggs
- 2 chicken mini fillets, diced
- 1 tsp smoked paprika
- Bell pepper, sliced
- Handful of spinach
- Salt and pepper
- Oil or butter for the pan
- 2 slices seeded bread, toasted
Method
- Season the chicken with smoked paprika, salt, and pepper.
- Beat the eggs with salt and pepper.
- Heat oil or butter in a pan over medium heat.
- Cook the chicken until golden and cooked through; set aside.
- Sauté the peppers until softened, then return the chicken to the pan.
- Add the spinach and let it wilt.
- Pour in the eggs, tilting the pan to spread evenly.
- Cook until set, fold and serve with the toasted seeded bread.
