Chicken, Pepper & Spinach Omelette

A quick, protein-packed lunch — smoked paprika chicken, peppers and spinach folded into an omelette, with seeded toast on the side.

Ingredients

  • 2-3 eggs
  • 2 chicken mini fillets, diced
  • 1 tsp smoked paprika
  • Bell pepper, sliced
  • Handful of spinach
  • Salt and pepper
  • Oil or butter for the pan
  • 2 slices seeded bread, toasted

Method

  1. Season the chicken with smoked paprika, salt, and pepper.
  2. Beat the eggs with salt and pepper.
  3. Heat oil or butter in a pan over medium heat.
  4. Cook the chicken until golden and cooked through; set aside.
  5. Sauté the peppers until softened, then return the chicken to the pan.
  6. Add the spinach and let it wilt.
  7. Pour in the eggs, tilting the pan to spread evenly.
  8. Cook until set, fold and serve with the toasted seeded bread.
