Super Quick Five Spice Chicken Noodles

A 15-minute, high-protein noodle stir-fry (~42g protein) with a sweet-savoury five spice sauce. Adapted from HelloFresh.

Ingredients

  • 240g diced chicken breast
  • 150g green beans, cut into thirds
  • 80g sliced mushrooms
  • 1 tsp Chinese five spice
  • 125g egg noodle nest
  • 1 tsp oil for cooking
  • Salt and pepper
  • For the sauce:
  • 50g ketjap manis (or 25g dark soy + 1 extra tbsp honey)
  • 25ml soy sauce
  • 15ml rice vinegar
  • 75ml water
  • 1 tbsp honey
  • 1 tbsp tomato ketchup

Method

  1. Boil the kettle and pour into a saucepan with ½ tsp salt on high heat (for the noodles).
  2. Heat the oil in a frying pan over medium-high. Fry the chicken, green beans, mushrooms and five spice for 6-8 min until the chicken is golden and cooked through. Season.
  3. Boil the noodles for 4 min. Drain and rinse under cold water.
  4. Stir all the sauce ingredients into the chicken pan. Stir-fry 1-2 min until glossy.
  5. Add the drained noodles and toss to coat. Heat 1-2 min more, with a splash of water if it tightens up.
